Spring Garden Salad with Halloumi and Avocado Ranch Dressing

Serves: 4

Ingredients:

Salad:

- 3 Cups Arugula

- 3 Cups Spring Mixed Greens

- 1 Avocado

- A Handful Cherry Tomatoes

- 1 Small Cucumber

- 4 Large Strawberries

- 1 Package Halloumi Cheese

- 2 tbsp Olive Oil

Dressing:

- 3/4 Cup Mayonnaise

- 1/2 Cup Buttermilk

- 2 Sprigs Dill (minced)

- 4 Chives (finely chopped)

- Juice and Zest from 1 Lime

- 1/2 Avocado

- Salt & Pepper To Taste

Instructions:

1. Chop tomatoes, cucumber, and strawberries into similar sized pieces and set aside.                                                                                   

2. Heat a pan on medium-high heat. Once hot, add oil. When oil is hot, add halloumi and sear until caramelization forms. Take it off heat and let cool before cutting.                                           

3. In a bowl, add mayo and avocado. Mix the two together. Once combined, whisk in buttermilk slowly to ensure there are no lumps. Add lime juice and zest, then the rest of the herbs. Season with salt and pepper to taste.                                                   

4. In a large bowl, toss the greens with desired amount of dressing.                                                                                                   

5. Top salad with sliced avocado, chopped veg and strawberries. Cut the seared halloumi into evenly sized cubes. Add halloumi to the top of the salad.                                                                         

6. Serve with extra dressing and enjoy!
